Sneaky! But we’re not complaining (until they introduce International Push Up Day) — any excuse to have a good time is fine by us! And this one seems especially fine… Enter: World Baking Day…
What Is World Baking Day?
So apparently, World Baking Day has been taking place on the 3rd Sunday in May since 2012. And, if we ponder on how much we love a cake, pie, scone, focaccia, quiche, sourdough (boy-o boy does the list go on!) we wish we’d heard of this holiday sooner! But, of course, baking is an ancient human activity — in fact the oldest oven ever discovered was 6,500 years old!
Regardless of what you make, baking always seems to bring people together. The smell wafting from the oven, a still-warm brownie pulled straight off the baking tray, a birthday cake that got a little burnt — it’s the thought that counts right? This is what World Baking Day is all about — sharing baked delights with your nearest and dearest.
Psychedelic Baking
In this spirit, we’ve decided to share one of our favourite baking recipes — but with a shroom-tastic Wholecelium twist of course! That’s right. Time to roll up your sleeves, throw on an apron and get on with some psychedelic baking.
Inspired by one of our favourite reads ‘The Psilocybin Chef Cookbook’ by Dr K Mandrake and Virginia Haze we decided to make their ‘Shroom and Broccoli Hand Pies’. However, we’re swapping out the magic mushrooms, for our trip-tastic fresh magic truffles. No growing time or drying time — they’re ready straight from the pack — perfect for this delicious but speedy bake!
So, the Wholecelium team came over all Nigella, and made a step by step guide of how to make these palm-sized pockets of goodness.
Ready, set — BAKE!
Shroom and Broccoli Hand Pies
You Will Need
- 1 pack pre-made puff pastry (we used a vegan one)
- A large onion
- 1 cup (or around 70g) broccoli
- 2.5 cups (225g) button mushrooms / champignons
- Garlic (we used 8 cloves!)
- 1 tsp of cumin
- ⅔ cup (aprox 160ml) coconut milk
- 1 tsp of garam masala
- Olive oil
- 15g Quibit magic truffles
How To:
- Preheat the oven to 175°C (350°F)
- Chop your broccoli, onion, garlic and mushrooms. Finely chop your truffles and put to the side.
- While the oven warms, heat a splash of olive oil in a pan, add the onion and garlic and fry until golden brown.
- Add your mushrooms, broccoli, garam masala and coconut milk to the pan.
- Cook for 10-15 minutes, until you see the liquid has reduced and the vegetables are tender.
- Remove from the heat and stir in your magic truffles.
- Roll out your pastry (or simply unwrap if your pastry is pre-rolled)
- Cut your pastry into how many hand pies you want to make, then place a spoonful of your filling onto each piece. (measuring by eye is useful here— you want your pie to be generously filled but still able to be sealed!)
- Wet the edge of your pastry.
- Fold the pastry over your filling and pinch the edges together to seal it so it looks a bit like a Cornish pasty or empanada (whichever you’re more familiar with!)
- Cut or score two little slices into each pie.
- Bake for 20-30 minutes until they are golden brown (and the delicious scent is driving you crazy!)
So there you have it! Delicious and trippy treats, perfect for World Baking Day. Eat them straight from the oven, take them to a picnic — do whatever you feel — you can even add ketchup, just don’t tell Nigella!
